Halibut with Cumin Brown Butter
serves 4
Ingredients
- 4 ea Halibut fillets (or any mild, white-fleshed fish)
- 4 T butter
- 2 T olive oil
- 3/4 t ground cumin
- 1/2 t lemon zest
- 1 T lemon juice
Instructions
- Melt the butter into the oil, season the fish with salt and pepper, then cook in the butter-oil mixture until the butter is golden and the fish is browned on the bottom.
- Turn the fish, add the cumin to the butter, then spoon the butter over the fish to finish.
- Plate the fish, then add the lemon zest and juice to the butter in the pan. Season with salt and pepper, then garnish the fish with the mixture.
