Halibut with Cumin Brown Butter

Instructions

  1. Melt the butter into the oil, season the fish with salt and pepper, then cook in the butter-oil mixture until the butter is golden and the fish is browned on the bottom.
  2. Turn the fish, add the cumin to the butter, then spoon the butter over the fish to finish.
  3. Plate the fish, then add the lemon zest and juice to the butter in the pan. Season with salt and pepper, then garnish the fish with the mixture.
